Cranberry Salad Recipe

This is a rockin’ recipe that my Dad shared with me a couple of years ago – and the newest addition to our family holiday tradition. Whip out the food processor and have some fun!

1 lb. bag fresh cranberries (I use (2) 12 oz bags)
1 cup pecans (I use two cups – love it crunchy!)
2 apples
1 orange (rind and all!)
1 (6 oz.) box of red jello in any flavor (Use ½ as much water as the directions call for)

1. Grind cranberries, orange and cover with 2 cups sugar and let sit.
2. Make jello – let sit 10 min – then mix all ingredients together in jello.
3. Refrigerate.

*Note: Can be made a day or so in advance. But the GREAT NEWS is: this recipe freezes really well so you can eat it throughout the year! (Great source of antioxidants!) I’ve frozen it (well sealed) for as long as a year – and it tastes just like you made it yesterday! Make it and freeze it while fresh cranberries are in season!

Update: 1/17/2010
– Today I made a “triple” recipe so I had enough to freeze (boy do we ever go through this stuff fast!) It made 8 1/2 Quarts… I also reduced the sugar by 1 cup (and it tasted sweet enough to me prior to it setting up.) If you want to reduce the calories, try reducing the sugar to taste – or replace sugar with stevia – a natural sweetener.
